It's very rare that a broken guitar cannot be fixed.
Headstocks can be glued back in place, or even replaced if necessary, scarf joints cleaned up and reglued, fingerboards coming away from the neck can be reattached, split soundboards and bodies can be joined back and lifting bridges removed, cleaned up and refitted better than from factory.
Other breaks can occur due to failures in the instrument, such as glue failures where the neck joins the body, or the bridge lifting off the soundboard of an acoustic. A blow to the top of a sound board can result in snapped internal bracing struts. Some of these failures can be subtle and may go unnoticed for some time, which will always make things worse down the line.
